New Zealand Blue Moki Fillet (Latridopsis ciliaris), also known as Trumpeter in Australia or Isuzumi in Japan. This is a firm-fleshed fish that flakes slightly when cooked. It is suitable for most cooking methods, it bakes particularly well.
