Whitestone cheeses are made using only natural ingredients and no artificial preservatives are added. They are true to the source of our raw grass feed milk and believe the natural flavours should be allowed to carry through. Therefore, minimal flavour enhancers are added – natural maple smoke being the greatest one we use.
An "unstabilised" brie, this is a living cheese that ripens with ageing. When young it has a firm centre which slowly softens to melt at the cut edge when ripe. The young delicate flavour strengthens with ripening to a hint of mushroom, while the exterior mould may die back and mottle.
