Fresh Fish Guide

Comparatively; fresh meat is quite forgiving compared to fresh seafood. People ask us why their fresh fish arrives with only one, two or three days ‘use by’ dates on them. The simple and short answer to that is - Fish isn’t fresh after 3 days.

 

The colder you can keep it, the better it will be. Every hour a piece of fish sits at room temperature is equal to aging 1 day in the fridge.

 

Portion sizes are the same for filleted fish as they are for meat:

 

Mussels or Clams (in shell) - 500 gm per person
