New Zealand Kingfish (Seriola lalandi) is a sashimi grade fish known in Japan as Buri or Hiramasa. In the US it's known as Amberjack. It has a firm succulent flesh with a low oil content. Flesh is dark, but lightens when cooked. Great for grilling, BBQ'ing, making Cerviche. Try it pan fried or grilled with a green peppercorn sauce. 

Storage : Keep frozen at -18°C or below.
