New Zealand Sole Gilled & Gutted (Peltorhamphus novaezeelandiae / Pelotretis flavilatus) is ready for cooking. It has delicate, mild-tasting white flesh. When fried as a gilled and gutted fish the skin crisps nicely. Sole has low to medium oil content.
