An "unstabilised" Brie, this is a living cheese that ripens like fruit with ageing. When young it has a firm centre which slowly softens to melt at the cut edge when ripe. The young delicate flavour strengthens with ripening to a hint of mushroom, while the exterior mould may die back and mottle

Storage, Handling & Defrosting Recommendations:

Cheese is a delicate living product that should be gently encouraged to perfection. Here are some guidelines that will allow you to experience Whitestone cheese at its best.

Remove from refrigeration at least one hour before serving to allow the cheese to come up to room temperature.

Whitestones "white moulded cheese" maturity point can be controlled, keep refrigerated at 6°C to slow the ripening process, but store at 10-13°C in a pantry to speed the ripening process. A fully mature white moulded cheese will be soft to touch and may mottle on the surface. Any ammonia smell on opening should disperse. Ripen to your taste preferences and trim if preferred.

To store, loosely wrap cheese in its original wrap or grease proof paper, as the cheese should be allowed to breath.

On waxed cheeses, cove rthe cut face with grease proof paper and trim any mould that may form before serving.

Should you use any of the Whitestones cheeses for cooking, heat slowly to avoid stringiness.
