| An excellent eating fish often referred to as Sea Bass. It has pale pink flesh which whitens on cooking. It is firm and stays moist (unless it's overcooked ). Generally mild flavoured with medium oil content. It's suited to all methods of cooking. Heads and frames produce tasty soup and stock.
