Frozen Fish Guide
Quantities required per person are the same
as fresh fish or fresh meat. If the fish is filleted use 200 gms per adult
as a ballpark figure. For skate wing allow 300 gms as there is cartilage. For
whole fish (rainbow trout, barramundi, snapper) or flat fish (sole or flounder)
allow about 400 gms of fish per person. These figures are only approximate and
are based on western cuisine main courses for average appetites. If you're
eating a Chinese meal with many courses the quantities would be considerably
less.
And now the caveats..... As much as
we try to stock various sized packages of frozen fish it is sometimes impossible
to find anything close to what you've ordered. If you order a 200 gm
flounder and all we have in stock is 400 gm fish we can only give you a 400 gm
fish. Fish are very inconsiderate in this regard. They grow to any size they
feel like before biting on that hook. We can't hack off the head and just
give you the tail. The same applies to fish fillets. Some fillets come as 300 gm
pieces. If you order 200 gms we can't open the pack and cut 100 gms off and
throw it away.
We sometimes have people ask us for 400 gms
of a particular fish but want it packed in 4 X 100 gm bags. Sorry - It can't be
done. We have more control and flexibility when cutting fresh fish and will do
our best to comply with instructions such as that; however, once it's frozen
that's it. We don't defrost fish to cut it and repack it.
