This is true John Dory - not one of the inferior varieties of other unrelated Dories or fish often marketed fraudulently as John Dory in Hong Kong. A word of advice. If the fish is being sold skinless or has skin without the the black 'fingerprint of St Peter' on each side of the fish - it's probably not true John Dory.
