1_Frozen Fish Guide
Frozen Fish Guide
Quantities required per person are the same
as fresh fish or fresh meat. If the fish is filleted use 200 gms per adult
as a ballpark figure. For skate wing allow 300 gms as there is cartilage. For
whole fish (rainbow trout, barramundi, snapper) or flat fish (sole or flounder)
allow about 400 gms of fish per person. These figures are only approximate and
are based on western cuisine main courses for average appetites. If you're
eating a Chinese meal with many courses the quantities would be considerably
less.
And now the caveats..... As much as
we try to stock various sized packages of frozen fish it is sometimes impossible
to find anything close to what you've ordered. If you order a 200 gm
flounder and all we have in stock is 400 gm fish we can only give you a 400 gm
fish. Fish are very inconsiderate in this regard. They grow to any size they
feel like before biting on that hook. We can't hack off the head and just
give you the tail. The same applies to fish fillets. Some fillets come as 300 gm
pieces. If you order 200 gms we can't open the pack and cut 100 gms off and
throw it away.
We sometimes have people ask us for 400 gms
of a particular fish but want it packed in 4 X 100 gm bags. Sorry - It can't be
done. We have more control and flexibility when cutting fresh fish and will do
our best to comply with instructions such as that; however, once it's frozen
that's it. We don't defrost fish to cut it and repack it.

Frozen AUS Baby Octopus
Australian Baby Octopus - Frozen. Tumbled and slightly tenderized these dwarf denizens of the deep are between the size of a golf ball and a tennis ball although they vary from slightly smaller to slightly larger. Each weighs between 80 - 120 gms. Use them to make a warm octopus salad, insulata di mare or stir fried octopus in angel hair pasta.

Australian salmon fillets have a high oil content and distinctive flavour. It is medium textured with large moist flakes. Frozen NZ Flounder

Flounders are flatfish that have become extremely popular in Australian restaurants. They have a delicate to medium flavour and their unusual appearance suits them well to presentation. Flounders have been found to bake beautifully either as they come or with a stuffing of fresh herbs and lemon zest. Lightly covered with seasoned flour, flounders can also be grilled with a little oil and lemon juice, or meuniere style to produce great results. For something a little different, lightly grill flounder fillets and then poach them in wine. Be careful not to overcook (from the Australian Seafood Users Manual)

Frozen MSC Chilean Seabass

Marine Stewardship Council (MSC) certified Chilean Seabass. Otherwise known as Patagonian Toothfish. Caught off South Georgia.
Somewhat similar to Black Cod, it has a mild flavour, high fat content and silky smooth texture.
With its high fat content, Chilean sea bass is well suited to dry-heat cooking methods such as broiling, grilling, and sauteing. One variation on the last technique that shows up a lot on restaurant menus is searing -- cooking thick cuts in a hot skillet to crust the exterior and finishing them in a hot oven, where they cook by radiant heat as well as conducted heat from the skillet.
We purchase this already packed and frozen - Portions range from 100 - 170 gm. Most are around 150 gm.
