With Christmas and New Year looming thoughts turn to entertaining hordes of visitors. With most of us struggling with postage stamp sized kitchens the question of what to serve is never far away. 

This year for the first time South Stream is able to offer uncured, cooked and most importantly already sliced hams. Not just any old hams, these US Homestead Natural Pork products are nitrate / nitrite free coming from free farmed pigs that are hormone and antibiotic free. Guaranteed gluten free as well. They are available as bone in or boneless.

In addition to Homestead Natural Pork products we also have a selection of NZ Freedom Farm hams. These are also cage free and come in a variety of sizes. From small 1.3 kg boneless hams to full leg cooked on the bone monsters of almost 10 kg.

 While we stay on the subject of all things porky we also have a new shipment of chilled Homestead Natural Pork raw products.
Pork Belly with skin, Bone in rack of pork, pork loin. It's the right kind of weather for a nice pork roast so have some crackling today. The pork loin can be rolled and tied for roasting on request.

Oven Roasted Rack of Pork 



Prep Time 10 mins 
Cook time 2 hours 15 mins
Total time 2 hours 25 mins    
Ingredients

1 -8 bone center cut rack of pork
olive oil
sea salt
black pepper
Montreal Steak Seasoning
2 carrots -rough cut
1 small onion-rough cut and include skins
2 stalks of celery- rough cut
6 cloves garlic peeled

nstructions

Preheat oven to 450 degrees  

In a roasting pan add your rough cut vegetables  

rinse the rack of pork well and pat dry  

place rack fat side up, on top of cut veggies 

apply liberal amount of olive oil, rubbing it into the meat 
sprinkle entire rack with sea salt, pepper and then with an extra coating of Montreal Steak Seasoning (use a good amount of Montreal seasoning forming a light crust)  

place pan in preheat oven at 450 degrees for 15 minutes.
after 15 minutes reduce heat to 325 and continue to roast for approximately 2 hours or until internal temperature on the outside of the racks has reached 160* 

This will ensure the outside of the pork is well done while the center cuts are not cooked quite as much. *  

Remove the Rack from the oven placing on a cutting board and allow to rest for 10 minutes before slicing the meat. This will allow all the juices to remain in the rack, rather than have them run all over the plate, making the meat dry.  

While the rack is resting, place 2 cups of water in the roasting pan and place on the oven and with a spoon loosen all the baked in meat scraps from the pan, making your pan gravy.  

Strain out all of the vegetable pieces and any residue
Cut the rack along the bones, making even portions of the pork, serve with your pan gravy and your favourite sides!

Notes
*when you remove a larger cut of meat from the oven it will continue to cook and the temperature of the meat will rise 10 more degrees. *Pork can be eaten at lower temperatures than 165 degrees, but if your entire party would like the meat very well done, you can continue to roast the rack until the center cuts are 155 degrees 
 

     NZ Orange Roughy  Fillets -  Pearly white meat - Skinless, boneless fillets - Medium texture. Very sweet and moist with a shellfish like flavour. Suited to steaming, poaching, shallow fry, baking and grilling. Suggested wines - Young semillon or cool climate sauvignon blanc.  

NZ Cardinal Fish Fillet - One of the moistest fish you'll ever find. It comes in a rather thick fillet which whitens on cooking and separates into substantial flakes.  Can be cooked using any method. Suggested wine accompaniment - aged Sauvignon blanc or Semillon-sauvignon blend

NZ King Salmon Fillets - Fresh salmon fillets with a high oil content and distinctive flavour. It is medium textured with large moist flakes. It's suggested by the Australian Seafood Users Manual that this fish "is perhaps best eaten rare after barely searing it on a very hot grill". Also excellent raw, baked, fried, poached or BBQ'd. A range of wines can accompany salmon. Try a medium bodied chardonnay with grilled or pan fried salmon

    NZ Snapper (Gilled & Gutted / Cleaned) -  A very popular fish with white flesh and a medium texture. Also known as Dorade Royale, Bream, Orata, Dentice and Tai Snapper. It's suited to most cooking methods and is great steamed Chinese style. This is sold as a whole cleaned fish. It is not filleted. Fish available - 900 gm size

Australian Tasmanian Atlantic Salmon Fillets - Fresh salmon fillets with a high oil content and distinctive flavour. It is medium textured with large moist flakes. It's suggested by the Australian Seafood Users Manual that this fish "is perhaps best eaten rare after barely searing it on a very hot grill". Also excellent raw, baked, fried, poached or BBQ'd. A range of wines can accompany salmon. Try a medium bodied chardonnay with grilled or pan fried salmon.
Australian Rainbow Trout (G&G) -  These are plate sized fish - each around 250 to 275 gms each. Suited to frying, poaching, grilling or baking. Suggested wine accompaniment - youthful Rieslings or other delicately flavoured wines. 

Smoked Tasmanian Salmon  - The same great salmon cold smoked and sliced. Sides range from 700 gm - 1.2 kg however you can order as much or a little as you like. (200 gm min)

Australian Barramundi Fillet -  This is a firm fleshed fish with large flake. It is moderately oily and is best suited to baking, grilling, frying or BBQ'ing. Suggested wine accompaniment - medium bodied, cool climate, crisp dry white wines.
